I’ve been in a comfort mood this week. We’ve had at least three ‘easy pasta’ dinners where I rustle around in the fridge/pantry and toss whatever I find into a pasta. On the way home from yoga last night, I stopped off at the Dairy Queen around the corner from our house and brought home a cookie dough blizzard for Martin and a very classic hot fudge sundae for myself. (Which also reminded me how much I LOVE hot fudge and should I be working on a recipe that features it??) And I restarted Friends for the hundredth time. I’ve just been fulling leaning into all things simple and familiar.
From that comfy, cozy mood these cookies were born. I was cleaning out my baking shelf and found a bag of finely shredded coconut tucked into the back corner begging to be used. In order to pump up the warmth, I toasted the coconut and filled the cookies with browned butter and vanilla. And in the simplest cookie, with no chill time (and you really don’t even need a mixer), these couldn’t be cozier.
